Hot Honey Bacon Enoki Rolls with Garlic Chips

Ingredients
- 40 g Empress’s Smoke N’ Hot Honey
- 10 strips bacon
- 400 g enoki mushrooms
- 7 g garlic
- 4 g white vinegar
- 5 g white sesame seeds
- 4 small sprigs rosemary
- Oil (for frying the garlic chips)
Steps
- Cut off the bottom part of the mushroom, divide the enoki mushrooms into small bundles and wrap each bundle tightly with a strip of bacon.
- Slice the garlic thinly and fry over medium-low heat until golden and crispy. Remove and set aside on a paper towel.
- Place the bacon-wrapped enokis in a frying pan over medium-low heat. Slowly render the fat and crisp up the bacon.
- When the bacon is golden and crispy, add Empress’s Smoke N’ Hot Honey, rosemary, and sesame seeds. Toss to glaze the mushrooms evenly.
- Add the vinegar and cook briefly to let it evaporate.
- Plate the mushrooms, spoon over any remaining glaze, and top with the crispy fried garlic.
